Salt contains a special property that is especially important for making our cool treat–it lowers the freezing temperature of water. Making it a REALLY cool treat! Now, if you were to place milk (one of the ingredients of our Caramel Sea Salt gelato) in the freezer, it would take a long time to become frozen. 32°F (the freezing point of water) just isn’t cold enough to solidify milk. By adding salt, the temperature drops down to about 0°F allowing the milk and other ingredients to solidify faster and create a delicious, light and decadent Italian treat.
